Will guests hear the cooling during a function?
No — that is the whole reason banquet halls go to a ducted system. The blower sits outside, on a plinth or the roof, and only cooled air comes into the hall through ceiling diffusers. What little you hear indoors is air moving at the diffusers, and the duct design keeps that velocity low enough to stay in the background. The machine, the water and the noise all remain outside the room.
Can evaporative cooling really cope with a hall packed with people?
Yes, and it suits a crowd better than air conditioning in one important way: a full hall needs a large supply of fresh air, and evaporative cooling delivers 100% fresh air on every pass rather than recirculating the same air through hundreds of people. The high air-change rate is what keeps a packed hall from going stuffy. It is sized to the peak crowd at the survey.
A hall is only busy occasionally. Does cooling still make sense?
It makes more sense than air conditioning, precisely because of the occasional use. The cost of buying and running enough tonnage of air conditioning to cool a full hall for a few hours a week is hard to justify. Can you cool the kitchen and the hall together?

We have an open marriage garden, not an enclosed hall. Does it still work?
Yes — an open or semi-open garden is a good fit because the air has an easy way out, which is what evaporative cooling needs. Units are placed to throw cooled air across the seating and dining areas.
